Freak Nasty, we're talking about some tasty layered bean dip brought to you by the Spot's contributing chef, Claudia Pruett, just in time for this weekend's Final Four! (and any other time works pretty well too!)
"Fan"tastic Bean Dip
Spread 1 can of refried beans in the bottom of a shallow 9 x 9 – inch baking dish.
Add a layer of 1 chopped tomato that has been mixed with 1 chopped Serrano chile, 2 chopped green onions and 1/2 can white corn. Add a layer of chopped avocado and top with a layer of shredded cheddar, jack or Mexican cheese.
Optional layers include: sour cream, black beans, southwest beans, salsa etc.
There ya' go! Ready in no time! Now just grab some chips and go to town! (While tuning in to see if Power Cat's picks actually are on target this time!)
